Banana Nut Cake

Ingredients


½ Cup Shortening
1½ Cup Sugar
2 Eggs
2 Cups Flour
1 teaspoon Baking Powder
1 teaspoon Soda
½ teaspoon Salt
½ Cup Sour Milk
1 Cup Mashed Bananas
1 teaspoon Vanilla
½ Cup Pecans (optional)

Directions


Cream shortening and sugar together.
Add beaten eggs and mix well.
Sift together flour, salt, baking powder, and soda. Add alternately with sour milk to the creamed mixture.
Beat with electric mixer.
Add mashed bananas and vanilla.
If using pecans, add to the mixture.
Pour in 8"×12" cake pan and bake for 30 minutes at 350°.


Icing Ingredients


½ Cup Margarine, melted
1 Cup Brown Sugar
&fact14; Cup Milk
2 Cups Powdered Sugar

Icing Directions


Mix the margarine and brown sugar together in a small saucepan.
Cook until thickened.
Cool slightly.
Add milk and powdered sugar.
May add pecans.
