Cream Of Broccoli Soup
Ingredients
1 lb. (16-oz.) Broccoli Crowns (fresh or frozen)
½ lb. (1 stick) Butter
1 Cup Flour
1 Quart Chicken Broth
1 Quart Half and Half
1 teaspoon salt
½ teaspoon White Pepper
1 lb. Velveeta Cheese
Directions
① Cut the broccoli into 1-inch pieces and cook in ½ cup water. Set aside, do not drain.
② Melt butter and add flour.
③ Cook 2-3 minutes, stirring occasionally.
④ Add the chicken broth.
⑤ Bring to a boil, stirring.
⑥ Turn down head and add broccoli, broccoli water, half and half, salt, and pepper.
⑦ Heat but do not boil.
⑧ Add Velveeta cheese and simmer.
Does well in a crock pot on low setting
