Cream Pie Filling

Coconut   |   Banana   |   Chocolate

Directions


Mix together in microwave-safe bowl:
2 cups half & half
2 cups milk
3 or 4 egg yolks
Mix together in quart-size zip-lock bag:
1 cup sugar
¾ cup flour
¾ teaspoon salt
With electric mixer on medium, beat the flour mixture into the milk mixture.
Heat for 5 minutes on high in the microwave.
Take out and beat until smooth with electric mixer.
Again, heat for 5 minutes on high in the microwave. Beat until smooth.
Add 1 teaspoon vanilla to filling.

Choose a filling:
Banana: Cool slightly & add 3 or 4 bananas
Coconut: Add 1 cup shredded coconut
Chocolate: Add 3½ Tablespoons cocoa to flour mixture

Pour in baked pie shell and top with meringue.
Bake meringue at 400° for about 5 minutes or until lightly browned.
