Cream Pie Filling
Coconut   |   Banana   |   Chocolate
Directions
① Mix together in microwave-safe bowl:
2 cups half & half
2 cups milk
3 or 4 egg yolks
② Mix together in quart-size zip-lock bag:
1 cup sugar
¾ cup flour
¾ teaspoon salt
③ With electric mixer on medium, beat the flour mixture into the milk mixture.
④ Heat for 5 minutes on high in the microwave.
⑤ Take out and beat until smooth with electric mixer.
⑥ Again, heat for 5 minutes on high in the microwave. Beat until smooth.
⑦ Add 1 teaspoon vanilla to filling.
⑧ Choose a filling:
Banana: Cool slightly & add 3 or 4 bananas
Coconut: Add 1 cup shredded coconut
Chocolate: Add 3½ Tablespoons cocoa to flour mixture
⑨ Pour in baked pie shell and top with meringue.
⑩ Bake meringue at 400° for about 5 minutes or until lightly browned.
