Crispy Sugar Cookies

Ingredients


¼ Cup Shortening
¼ Cup Softened Butter
1 Cup Granulated Sugar
2 Eggs
1 teaspoon Vanilla
½ teaspoon Grated Lemon Rind
2 Cups Sifted Flour
2 teaspoons Baking Powder
½ teaspoon Salt

Directions


Blend together shortening, butter, and sugar.
Beat into creamed mixture eggs, vanilla, and lemon rind.
Sift together and stir in flour, baking powder, and salt.
Chill dough for easier handling.
Remove a small amount at a time from the refrigerator and roll 18 to 116 inch thick.

Place the cookies 2-inches apart on a baking sheet.
Sprinkle with granulated sugar.
Bake in moderate oven (375°) 10 to 12 minutes or until delicately browned.

You can cut these "roll-and-cut-out cookies" with fancy cutters and decorate them for festive holiday cookies
