Lemon Meringue Pie
Ingredients
1 Cup Sugar
1½ Cups Water
¼ teaspoon Salt
2 Egg Yolks
¼ Cup Flour
1 Tablespoon Margarine
2 Tablespoons Cornstarch
¼ Cup Lemon Juice
Grated Rind of 1 Lemon
Directions
① Make pastry shell. Bake at 425° for 10 to 12 minutes.
② Blend together sugar, salt, flour, and cornstarch.
③ Stir in water.
④ Cook in microwave for about 3 minutes.
⑤ Stir with mixer and return for 1 more minute or until mixture thickens.
⑥ Stir a little of the hot mixture into the beaten egg yolks.
⑦ Combine mixes and cook in microwave about one minute longer.
⑧ Stir with mixer and add lemon juice or rind, and margarine.
⑨ Adding a couple of drops of yellow food coloring will make it more lemon colored.
⑩ Pour into baked pastry shell.
⑪ Cool. Top with meringue.
⑫ Bake meringue for 5 to 6 minutes in a 400° oven.
