Lemon Meringue Pie

Ingredients


1 Cup Sugar
1½ Cups Water
¼ teaspoon Salt
2 Egg Yolks
¼ Cup Flour
1 Tablespoon Margarine
2 Tablespoons Cornstarch
¼ Cup Lemon Juice
Grated Rind of 1 Lemon

Directions


Make pastry shell. Bake at 425° for 10 to 12 minutes.
Blend together sugar, salt, flour, and cornstarch.
Stir in water.
Cook in microwave for about 3 minutes.
Stir with mixer and return for 1 more minute or until mixture thickens.
Stir a little of the hot mixture into the beaten egg yolks.
Combine mixes and cook in microwave about one minute longer.
Stir with mixer and add lemon juice or rind, and margarine.
Adding a couple of drops of yellow food coloring will make it more lemon colored.
Pour into baked pastry shell.
Cool. Top with meringue.
Bake meringue for 5 to 6 minutes in a 400° oven.
