Lemon Squares
Ingredients
1 Cup Flour
½ Cup Margarine or Butter
¼ Cup Powdered Sugar
1 Cup Granulated Sugar
2 teaspoons Grated Lemon Peel
2 Tablespoons Lemon Juice
½ teaspoon Baking Powder
¼ teaspoon Salt
2 Eggs
Directions
① Heat oven to 350°.
② Mix flour, margarine, and powdered sugar.
③ Press in ungreased pan, 8"×8"×2" or 9"×9"×2", building up ½ inch around edges.
④ Bake 20 minutes.
⑤ Beat remaining ingredients about 3 minutes or until light and fluffy.
⑥ Pour over hot crust.
⑦ Bake about 25 minutes or until no indentation remains when touched lightly in center.
⑧ Cool.
⑨ Sprinkle with powdered sugar if desired.
⑩ Cut into 1½ inch squares.
