Streusel Coffee Cake
Ingredients
¾ Cup Sugar
¼ Cup Soft Shortening
1 Egg
½ Cup Milk (use an additional ¼ Cup for a moister cake)
1½ Cups Sifted Flour
2 teaspoons Baking Powder
½ teaspoon Salt
Streusel Mixture
½ Cup Brown Sugar, Packed
2 Tablespoons Flour
2 Tablespoons Butter, Melted
½ Cup Chopped Pecans
Directions
① Mix together sugar, shortening, and egg.
② Stir in the milk.
③ Sift together and stir in the flour, baking powder, and salt.
④ Spread one-half of the batter in a greased and floured 9" square pan.
⑤ Sprinkle with half the Streusel Mixture.
⑥ Add the remaining batter, and sprinkle remaining Streusel Mixture over top.
⑦ Bake in a 375° oven for 25 to 35 minutes.
⑧ Serve warm, fresh from the oven.
