Tamale Pie

Ingredients


1 Cup Corn Meal
1 lb. Ground Beef
1 teaspoon Salt
1½ teaspoons Chili Powder
3 Cups Boiling Water
2 teaspoons Salt
1 Chopped Garlic Clove
2 Cups Diced, Canned Tomatoes
1 Chopped Onion
1 Cup Canned Whole-Kernel Corn
2 Tablespoons Shortening

Directions


Stir corn meal and salt into rapidly boiling water; simmer 10 minutes.
With a tablespoon, line the bottom and sides of a greased 1½ quart casserole dish with ⅔ of the corn meal mixture.
Melt shortening in skillet.
Add garlic, onion, and beef; brown.
Add the seasoning, tomatoes, and corn. Stir well.
Pour into the cornmeal-lined casserole dish.
Strip the remaining corn meal on top.
Bake at 350° oven for 45 minutes.
